EBCC BARREL AGED BEERS

GIN BARREL AGED NORDIC SAISON

We brewed a Saison with elderflower blossoms and sea buckthorn to give an herbal twist to this farmhouse style Belgian golden ale. To further the process it was aged in a gin barrel from Seattle-based Copperworks Distilling, highlighting the botanical notes. CHUCKED BERRIES

Our Fruited Dark Saison was brewed as an offshoot of our award-winning Big Pun. Using raspberry and cherry in primary fermentation, we then moved the beer into freshly emptied red wine barrels where we chucked even more fruit and inoculated the beer with our Big Pun culture. Barrel Info: Cuillin Hills Syrah and Manto Negro (Woodinville, WA) Time in Barrel: 13 Months | ABV: ~8.3%.
PORT BARREL CHOCOLATE PORTER

Because everyone loves wine and chocolate, we took our porter made with roasted cocoa nibs and aged it for a year in a fresh port wine barrel. The barrel imparted a rich red wine aroma, some black pepper, and sour cherries which pair perfectly with the dark chocolate flavor in of the porter. BOURBON BARREL FAUNTLEROY (IMPERIAL STOUT)

We placed our relatively dry (yet boozy) Imperial Stout in bourbon barrels for three months and let it take on all the flavors of America’s favorite spirit! The result is an even stronger, fuller body with definite vanilla influences from the oak and barrel char. Barrel Info: Heaven Hill Bourbon, Heavy Char Time in Barrel: 3 Months | ABV: ~9.2%

Our take on a traditional, wild fermented sour beer dating back to the 16th century of Northern Germany. Too tart? Add a shot or two of our seasonal syrups to sweeten it up. Flavors: Raspberry, ginger (house-made), lemon (house-made) | ABV: 3.1%
